Eryngium agavifolium is a distinctive South American sea holly with apple green, serrated, elongated leaves rising from a central rosette that taken together resemble a century plant or Agave. In late summer the rosette produces a stem two to four feet tall with clusters of egg shaped inflorescences of white flowers.
